On November 14, 2024, at 6:00 PM, guests will be treated to an unforgettable evening of culinary artistry. Executive Chef David Vinoya of the Hilton Garden Inn and acclaimed Chef Mario Mateo from Mexico will present a unique five-course dining experience, showcasing a seamless fusion of Canadian and Mexican flavours.


This exclusive event honours both innovation and tradition, with each carefully crafted dish reflecting the rich cultural heritage behind this exceptional collaboration. It promises to be a night of exquisite flavours, a vibrant atmosphere, and a true celebration of culinary excellence.

Corazón Indigenous Dinner

On November 17, 2024, at 6:00 PM, the Corazón Indigenous Dinner offers a groundbreaking culinary experience. Indigenous chefs from the Arctic, Central Canada, and Mexico will unite to showcase their vibrant traditions and flavours.


The exceptional line-up includes Executive Chef David Vinoya, Chef Trudy Metcalfe Coe, Chef Mario Mateo from Mexico, and Executive Chef Billy Alexander of Mādahòkì Farm.


Recognized for his leadership in Indigenous gastronomy, Billy brings over 25 years of culinary expertise, having worked with the Indigenous Tourism Association of Canada and made numerous National TV appearances. His cooking, deeply rooted in both Indigenous and Scottish heritage, celebrates ingredients from the natural world, what he calls the “original grocery store.”
